The new legislation (Presidential Decree 376/95, "Regulation governing the collection and marketing of fresh and preserved mushrooms epigean.") Provides that the fungus kept, imported or not, undergo before being placed on two separate controls market: first by the mycologist of the packager and the second by the Mycological Inspectorates of Public Health Services of AUSL during the regular supervision of food hygiene.

In more recent years we were enacted other laws and regulations relating to mushrooms; remember for example the DM. No. 696/96, "Rules concerning criteria and procedures for the issue of a mycologist.", and the DM. October 9, 1998, "mentions qualifying that accompany the trade description of dried mushrooms.".

Both the DPR 376/95 that the subsequent Decree of 1998 entering in the technical specifications with regard to the fungal species to be sold fresh, dried or otherwise treated, and identify the analytical methods and the associated tolerance limits in reference to both the dried mushrooms both to those conserved in another way.

Outline the main features

The mushrooms, also known as fungi, include numerous species of species of organisms characterized by heterotrophic feeding and reproductive system mediated by said spores elements.
Recall that plants containing chlorophyll are autrofi organisms, because they feed from inorganic substances by means of chlorophyll synthesis, while the animals are heterotrophic. Herbivores are heterotrophic first order, precisely because they feed on grass, autotrophic organism; carnivores, however, are heterotrophic higher order; the man is located at the top of this food pyramid.

While the plant cell walls are formed mainly by the polysaccharide cellulose, those of fungi are formed from polysaccharide chitin, more resistant cellulose to degradation by microbes, such as heat, cold and drought, for the presence of a particular chemical group (to those who have knowledge of organic chemistry, we recall that the hydroxyl group of the cellulose monomer is replaced by a acetilammina group in the chitin.)

Mushrooms are rich in nutrients of various kinds, are an important food source.

Several species of fungi have anticancer properties; other species contribute to lower the level of cholesterol in the blood, others contain vitamins and amino acids paramount.

We do not abuse it, because they are difficult to digest, and also there are species containing various types of mycotoxins, which can accumulate in 'body with deleterious health effects.
